Avocado toast with pancetta and mushrooms

The ingredient to prepare avocado toast with pancetta, red onion of Tropea mousse and mushrooms:

  • 2 ripe avocados
  • 4 slices of whole grain bread
  • 100 g of Calabrian pancetta
  • Tropea IGP red onion mousse
  • 150 g of mixed Calabrian mushrooms
  • Extra virgin olive oil
  • Salt and pepper to taste

How to prepare avocado toast with Calabrian pancetta, red onion of Tropea mousse and mushrooms:

Start by toasting the slices of whole grain bread until they are crispy.

Thinly slice the Calabrian pancetta and pan-fry it in a non-stick skillet until crispy.

In a bowl, mash the ripe avocados and season them with a tablespoon of olive oil, salt, and pepper.

Spread the seasoned avocado onto the toasted bread slices, optionally adding a dollop of Tropea red onion mousse, and top with the crispy pancetta.

 

To Prepare the Second Variation with Mixed Calabrian Mushrooms:

Toast the slices of whole grain bread as in the previous variation.

Mash the avocado in a bowl and season it with a tablespoon of olive oil, salt, and pepper.

Spread the seasoned avocado onto the toasted bread slices and distribute the sautéed mixed mushrooms over the avocado spread. Optionally, garnish with freshly chopped parsley.
