Calabrian recipes: cake with ricotta cheese and bergamot jam
Bergamot is a citrus fruit that grows only along the coast of Reggio Calabria and has an intense aroma. Today, we would like to show you how to prepare a delicious ricotta cake enriched with the strong flavour of bergamot jam.
Ingredients
- 250 g of ricotta cheese
- 250 g of brown sugar
- 250 g of flour type 00
- 2 eggs
- 50 g of melted butter
- Milk
- 1 sachet of baking powder
- Grated lemon rind
- Bergamot jam
- Powdered sugar
The Calabrian recipe
Preparing the cake with ricotta and bergamot jam is quite easy and fast.
First, whisk the eggs with the sugar until they reach a frothy consistency.
Add the ricotta and lemon peel, mix well and add the slightly cold melted butter.
At this point, sift the flour with the baking powder and add a little milk to make the dough softer.
Pour the mixture into a previously buttered and floured baking tin and bake in a preheated oven for about half an hour at 180°C.
Take the cake out of the oven, and when it is cold, cut it in half and fill it with bergamot jam.
After a sprinkling of powdered sugar, the cake will be ready to be served!
