Codfish salad, quick recipe
Cod salad is a truly delicious dish, ideal as a dinner saver in the warmer months of the year, especially if it is enriched with the right ingredients. This mouth-watering recipe can be prepared in advance and served as a starter or as a main dish. Prepared with Tropea red onion, black olives and a few cherry tomatoes, it is a real treat for every palate.
The crispy, fragrant Tropea onion - pride of Calabria - gives this salad a unique flavour with its sweet taste. To make the cod salad even tastier, you can enrich it with boiled potatoes, sultanas and pine nuts, although the basic recipe is already a delicious dish in itself, just try it!
Codfish salad. Ingredients for 4 people
- 600g of codfish
- 200g of cherry tomatoes
- 1 Tropea onion
- Black olives to taste
- Fresh basil to taste
- Extra virgin olive oil to taste
- Salt and black pepper to taste

Soak the cod in cold water for at least 24 hours, taking care to change the water frequently. Bring the water to the boil in a pot large enough to hold our cod, then immerse the cod and let it cook for about 10 minutes; do not overcook it, the risk is that the fish will become very stringy.
Drain the cod, leave to cool, then flake it on a plate. Meanwhile, thinly slice the Tropea onion, clean and chop the cherry tomatoes and black olives.
Lightly salt the cod, season with pepper, black olives, Tropea onion and chopped basil, then add plenty of extra virgin olive oil and stir gently to mix the ingredients.
