Cooking broccoli with pasta
Broccoli: some people love them, some people hate them, but few people know that small steps are enough to turn them into a tasty dish.
Combining them with other delicious ingredients, such as pancetta and pecorino cheese, will give life to many appetizing variations to be discovered!
Pasta and broccoli, ingredients
- 320g of rigatoni pasta
- 450g of broccoli
- 1 garlic clove
- Extra virgin olive oil to taste
- Salt to taste
- Black pepper to taste
How to cook broccoli with pasta
To make this dish, first remove the core from the broccoli florets, then rinse them under running water. Bring a pot of salted water to the boil and as soon as it starts boiling, add the broccoli. Cook for about ten minutes.
Meanwhile, fry a clove of garlic in a little oil in a high-sided pan. Drain the broccoli, saving the cooking water, and transfer them to the pot. Keep a few small florets of broccoli aside, which you will then add to the ready-made pasta. Add a little water to the broccoli. Season with salt and pepper and cook over a medium heat for about 20 minutes, or at least until the broccoli are cooked and almost creamy. Add more water if necessary. When cooked, remove the garlic clove.
Cook the pasta al dente in the water in which you boiled the broccoli, adjusting the time according to the package directions. Add the broccoli to the sauce and set aside. Drain the pasta and add it to the broccoli cream. Add a ladleful of cooking water, depending on the creaminess of the sauce. Toss the pasta with broccoli for a few moments, then serve piping hot with pepper to taste. Your pasta with broccoli is ready, enjoy your meal!
