How to freeze potatoes
How to freeze potatoes ready for cooking? Just a few tricks and you will have your potatoes ready in chunks to be baked together with your roast or chips to dip in hot oil, in any size and for any dish.
How to freeze potatoes: the process
The quantity of potatoes is of course at will. You will need kitchen towels and special containers for freezing: white trays in material suitable for microwave ovens are excellent, or aluminium trays to cook and store in the freezer.
Wash the potatoes, peel them removing any small impurity, then wash them carefully in cold water and cut them into chunks to cooking in the oven or into sticks to fried them. Keep them immersed in cold water in a bowl until boiling.
In the meantime, bring plenty of water to the boil in a large saucepan, salt slightly and cook the potatoes into portions so that the pot is not overfilled. When the boiling time is reached, calculate two minutes for the precooking, then take the potatoes and immerse them in a bowl with cold water and ice cubes.
Then take them out and place them on kitchen towels, patting them gently so that they lose all traces of moisture. When the potatoes are cold, place them in freezing trays without overlaying them too much, seal the packages and place them in the freezer. Blanched and frozen potatoes can be stored for up to 12 months.
