Pasta with dried tomatoes and anchovies
Today we want to propose stroncatura with dried tomatoes and anchovies, a very tasty first course, typical of Calabrian cuisine. It can be prepared in a few minutes and is perfect to serve at a dinner with friends.
Ingredients for pasta with dried tomatoes and anchovies
- 320g of stroncatura pasta
- 120g of dried tomatoes in oil (drained weight)
- 40g of anchovies in oil (drained weight)
- 1 clove of garlic
- 1 sprig of parsley
- Extra virgin olive oil to taste
- Salt to taste
How to make pasta with dried tomatoes and anchovies
Cook the pasta in plenty of boiling water with very little salt. In the meantime, drain the dried tomatoes from their oil and chop them with a knife. Do the same with the anchovy fillets, then wash and chop the parsley.
In a frying pan, brown the garlic clove in 4-5 tablespoons of extra virgin olive oil. Remove the garlic, add the anchovies and let them dissolve over a low flame. Add the sun-dried tomatoes and fry for a few moments.
Drain the stroncatura and pour it into the pan with the anchovies and the sun-dried tomatoes, add the chopped parsley and mix well for a minute.
Remove from the heat and serve the pasta with dried tomatoes and anchovies hot. Enjoy your meal!
