Prawns in white wine
Prawns prepared with white wine are a second fish dish that you can prepare quickly without too much difficulty. Although it is a recipe we often reserve for important holidays, in reality prawns can be prepared in everyday life. A few simple ingredients give the prawn meat softness while adding more flavor and taste. You can serve prawns in white wine by pairing with a side dish such as a salad or seasonal vegetables. One trick is to not let the cooking sauce shrink too much; it will be used to drizzle over the prawns once they are cooked and plated.

- 20 prawns (servings for 4 people)
- Half a glass of dry white wine
- 1 clove of garlic
- Parsley to taste
- Extra-virgin olive oil to taste
- Salt and pepper to taste
How to prepare Prawns in white wine
Let's clean the prawns thoroughly by removing the legs and whiskers, then run them over a stream of running water. Let's drain the prawns in a colander.
In a fairly large frying pan, we sauté a clove of garlic in a drizzle of extra virgin olive oil and a pinch of chili pepper.
We remove the garlic and chili and place the prawns back in the pan, add chopped parsley. We let the prawns brown on each side.
We cook with the lid on for about 2-3 minutes, then lift the lid and deglaze with dry white wine. We cover again and finish cooking for another scant 5 minutes. Halfway through cooking we turn the prawns over so as to ensure even cooking on each side.
