Red onion cream
A red onion sauce from Tropea for accompanying main meat dishes, stuffing piadinas, flatbreads or pizza; also excellent to use on cheeses, a mouthwatering cream to use in a variety of ways.
You can prepare the red onion cream and store it in the refrigerator for a few days, so it is always ready to season any dish, or prepare it at the moment, in fact it does not require any special ingredients and is ready in a few minutes.

2 Tropea red onions

100g brown sugar

100ml balsamic vinegar

400ml water

Chili pepper to taste
How to prepare Red Onion Cream
We peel the Tropea onions, use a mandoline to chop them finely. If we want a creamier sauce that is less coarse on the palate, we blend the onions using a kitchen blender. Place the onions back in a pan with the brown sugar, a pinch of chili pepper, water and balsamic vinegar.
We mix everything well, then cook over medium heat for about an hour or until the water completely sets. We stir occasionally to prevent the cream from sticking to the bottom of the pan.
We can now let the Red Onion Cream cool and employ it to season our dishes, or store it in the refrigerator for a few days.
