Spicy spaghetti with porcini mushrooms
Today we propose a very simple but very tasty recipe: spicy spaghetti with porcini mushrooms. The sprint given by the Calabrian chilli pepper, which goes well with the woodland aroma of fresh mushrooms, will make this first dish typical of the autumn period special.
Spicy spaghetti with porcini mushrooms: ingredients for 4 people
- 360 g of spaghetti
- 500 g of porcini mushrooms
- 50 g of extra virgin olive oil
- 10 g of parsley
- 2 cloves of garlic
- Crushed chilli
- Salt

Clean the porcini mushrooms thoroughly, scratching the earth off the base of the mushroom with a small knife. With a small brush with very soft bristles, brush the mushrooms trying to remove all the earth that is attached to them and finally rinse them quickly under a jet of cold running water. Never leave the mushrooms to soak in water, otherwise they will absorb too much, like sponges, ruining the taste.
When you have cleaned all the porcini mushrooms, cut them into slices 3-4 mm thick. Put the extra virgin olive oil, chilli pepper, crushed garlic and, when the latter is still clear, the mushrooms in a large pan. At this point, cook over medium heat for a maximum of 10 minutes, adding salt.
Put a pot of salted water to boil; boil the spaghetti, drain them al dente and add them to the porcini mushrooms seasoning, mixing everything together. Your spicy spaghetti with porcini mushrooms are ready to be enjoyed, enjoy!
