Stockfish with potatoes Calabrian style, ingredients
- 1kg of Mammola stockfish
- 1kg of potatoes from Sila PGI
- 1kg of tomato puree
- 1 red onion from Tropea PGI
- 1 teaspoon of capers
- Fresh chilli pepper to taste
- Crushed green olives to taste
- Extra virgin olive oil to taste
- Salt to taste
How to prepare stockfish with potatoes Calabrian style
In a pan fry the sliced onion in the oil. Add the tomato puree and cook over a low heat for about five minutes. Season with salt and add the potatoes cut into wedges and after a few minutes the stockfish in pieces.
Leave to cook on a very low heat for about twenty minutes, add the olives, capers and fresh chilli pepper, then mix everything together carefully.
Turn off the heat and after letting it rest for a few minutes, you can serve the stockfish with potatoes alla calabrese. If you wish, you can add the fish bellies to the dish. Enjoy your meal!
