Stuffed peppers with ground meat and provolone cheese
Stuffed peppers are a widely prepared main course in the southern regions of Italy; very tasty, they can easily be offered as a main course. In Bottega di Calabria we love peppers very much, in this recipe we offer them stuffed with minced beef and our exquisite provola calabrese, but this delicious vegetable lends itself to be prepared in a thousand other ways, or, always stuffed, perhaps with foods that wink at vegetarians, you are really spoiled for choice.
Ingredients of Stuffed Peppers with ground beef and provolone cheese
- 2 peppers (servings for 4 people)
- 400g ground beef
- 1 seasoned sausage
- 150g provola calabrese cheese
- 50g of bread crumbs
- 1 egg
- 1 tablespoon grated Parmesan cheese
- 25ml extra virgin olive oil
- Parsley to taste
- Salt and pepper to taste

We season the minced meat with the Extra Virgin Olive Oil, finely chopped parsley and, if desired, a few sprigs of rosemary also chopped. We place the processed meat back in the refrigerator and let it rest for about an hour.
Let's crumble the sausage and place it back together with the minced meat with the egg, wet and well squeezed breadcrumbs, grated Parmesan cheese and diced provola calabrese. We adjust the salt and pepper and blend the mixture.
We wash and hull the peppers, divide them in half and fill them with the previously seasoned minced meat. We retrieve a baking pan, grease it or line it with baking paper and lay our stuffed peppers on it. Meanwhile, we preheat the oven to 180 degrees.
Let's bake the peppers in the oven for 35-40 minutes, the last 5 minutes let's devote them to passing them through the grill, so as to ensure the formation of that appetizing golden and crispy crust on the surface. Before serving, sprinkle them with chopped parsley.
