Pasta Ricca
The Cauteruccio artisan pasta factory has specialized in the production of dry pasta since 1971, and today the company is known under the 'Pasta Ricca' brand. Bronze-drawn pasta is produced in an artisan process using only natural and Mediterranean ingredients along with the finest durum wheat semolina. The mixture is prepared slowly with cold spring water. Various pasta shapes are made by using bronze die plates that make the surface rough and give Pasta Ricca a taste like homemade. These die plates are now rare because they require a much longer and more expensive process than normal. However, together with the use of thicker semolina, they guarantee a unique taste and an exceptional quality to final products.
